ByFood: An Idea for a Chicken Liver Dish

Two days ago, I wanted to eat some chicken liver. But it was always sold in big packets at the supermarket and there were bound to have leftovers. It was boring to cook chicken liver stir fry red / green chillies all the time, and I admitted it could look distasteful to many people. 

So I thought long and hard for something different and decided to make chicken meat and liver kebabs from the uncooked leftovers. It wasn't any extraordinary dish but definitely easier and tastier to eat. I chose red and yellow peppers because Rainy told me before that these are sweeter than the green ones.

My Chicken, Chicken Liver and Peppers Kebab
Ate these with rice and some other side dishes
Main Ingredients (Serves 3)
1 big piece skinless & boneless Chicken Thigh meat
3 pieces chicken liver
1/2 Red Pepper
1/2 Yellow Pepper
6 Satay Sticks

Marinade Ingredients
2 tsps Light Soy Sauce 
1 tbsp Corn flour
2 - 3 dash Ground Black Pepper 
1 tsp Sesame Oil
1/2 tbsp Rice Wine / Liquor

Sauce Ingredients
2 - 3 cloves Garlic (flattened and coarsely chopped)
1 tbsp Black Pepper Sauce / Barbeque Sauce
1 Lemon Ice Cube / A Qtr Lemon Juice
1/2 tsp Dark Soy Sauce
1/4 cup Water

1. Cut the chicken thigh meat and chicken liver into big chunks then marinate them for 2 - 3 hours inside the fridge. 

2. Cut the peppers into big chunks then stir fry them till half cooked and set aside in a bowl to cool down. Leave the vegetable juice inside the pot / pan (cover to prevent contamination). 

3. Stir fry the marinated meat in the same pot / pan till just nicely cooked (not overly cooked) and set aside in a bowl to cool down. Leave the gravy inside the pot / pan.

4. Add the sauce ingredients to the leftover gravy inside the pot / pan. Stir and mix well then let it simmer. The sauce should become fragrant and gluey in texture after 5 - 7 minutes, switch off stove heat. 

5. Rinse the satay sticks in water

6. Pierce the cooked meat and vegetables through the satay sticks according to your preference of order. Place the kebab sticks on a baking tray then spoon the sauce over them neatly. 

7. Put the kebab sticks in the toaster / oven to roast for 7 minutes and they are ready to be served!
