I woke up early this morning to prepare porridge and some dishes for my family. Everyone ate till burped at least 3 to 4 times so I guessed this must be what is called, a filling breakfast. There was still some porridge left in the pot and my family has a "no food wastage" policy so I thought that making Porridge Pancake (taught by Sunny) would be a good idea. I made into nuggets version
Well, it was a bad idea afterall even though this was my 2nd try at this dish. Why? If you do not like flour, if you are impatient, if you don't like deep-frying and if you are health conscious, it is not recommended to attempt this recipe!
- The idea of adding rice flour into porridge and eating it, made me really sceptical about the taste. I was totally turned off by the time I added my 3rd tablespoon of rice flour into the mixture. So I stopped at that.
- I totally made a mess out of it at first because I didn't know how much rice flour to add. It took me 3 tries to get the texture right. By that time, I didn't have enough oil inside the pan anymore and my nuggets could not turn golden brown. So I had to keep adding more oil which is very unhealthy.
- It took me about 10 - 15 minutes to fry each side of the nuggets using medium-low heat. And, my pancakes still weren't rich golden brown! This means that I had to use medium heat and quite a lot of oil during deep frying process.
- I added diced salted vegetables + light soy sauce into the porridge flour mixture because Sunny likes this flavour. But darn... I didn't like this flavour the least bit even after taking a few bites. ;|

The inside texture was surprising though because it tasted like fried carrot cake and this was the main good thing about Porridge Pancake. I strongly recommend using seafood or other meat with vegetables when making this. All in all, this was an exasperating attempt at Porridge Pancake. I won't been making this for the time being, which also means that I've to cook lesser porridge during meals next time!
